It does according to Apple - and seeing as it's more than likely them that honours the warranty it isn't a wise idea - Obviously restoring it to 'standard' before you take it in gets round it, but if the phone locks up I wouldn't fancy my chances of them agreeing to fix it.

As you correctly mentioned - restoring to orginal will return the phone to stock.
I would also wager if you have to return the phone under warrenty , for whatever reason - then the apple bod in the shop will not be able to detect if it has been jailbroken or unlocked.
