There's nothing inherently special about it as such - there are other touchscreen multimedia phones on the market that can browse the net etc.
But what I love about it, is the WAY it does what it does. The mobile version of Apples OS X just, well, works. It's slick and fast, mobileSafari is a joy to use, I love how countless webpages are automatically reformated to "iphone" pages (for optimisation(sp) of the browser) and how full web pages can be fully displayed (when I browse PF on my iPhone I can have it show exactly what it would show if using Safari on a Mac or IE on a PC)
I love it's mail client, which coming from a Gmail user, is saying something! Most mail clients are nightmares for gmail users, but Mail just well, works really.... Tho I do miss my gmail loading in conversations like it does in the web browser - but then I can access that fine from mobileSafari anyway - in full page or "iphone mode"
I like it's shortcuts, I like the apps, I love how it looks, I like it's intergration between contact info and email/sms/mms/pics/web pages, I like it's size, the feel of it, the customisation (after you jailbreak it

)
I just like it really

As I think a lot do......
