Motul 300V Competition starts to make problems at 140+ and you loose oil preassure at 150. 300V Le Mans can do the job a bit longer.

We had problems with overheating oil on one of 4turbo.eu Evo's during track days last year. The car wouldn't have any oil preassure at idle after ~15 laps.

We also had problems with oil temps on 2.5 litre Impreza but big oil cooler cured the problem and manages to keep temps at 110-120 degrees at slow uphill sections.

I am not sure about water temps it's probably a lot car dependant, I know that Cossies tend to run much higher temps then other cars. On Subaru I would be very worried seeing 120 degrees (you can actually hear knock inside the car on standard car at 120 degrees indicated by ECU before det control cuts boost and ignition).
