Out of the 7 or 8 I'd go for an 8 300MR and tune it. The savings from the 320/340 should cover the cost of the tuning & you'll have a better car at the end of it.
Most people on MLR advocate the VIII FQ MR320 as the best one to buy if you want to mod.
