Default Changing complete braking system - easy?

Basically, I want to replace my front discs and pads for cossie ones and just replace the cylinder and shoes on the rear, and bleed the whole system with new brake fluid.

I have 2wd discs and 4x4 calipers and pads, and just new shoes for the back.

DO they go straight on? Some people say they have had to use a 1mm spacer, why is this, and where can i get one from if i need one?

Is it all a straightforward process if I get someone to keep the pedal held in/out when i say and remove the bleed nipple as and when?

changing the rear shoes, is this easy?

any problems i might run into?

Any help appreciated!
