It is too much heat entering the water, either your cooling system is not as it should be, or you have headgasket going/gone.
I would look at reverse flushing the rad as a minimum, then check the top bottom hose to see if they are tha same temp and nice and hot.
I would also for the money install a new thermostat.
With this much cooling there should be no reason at all why it would not keep it's cool.
When you say overheating is it pushing water out of the expansion tank, how do you know it is oveheating ?

car is putting out 200bhp looks to me to be std intercooler and rad with single fan mounted to the left slightly would this have an affect on my temp or could my temp gauge be knackered

i had an rs turbo van that did this, in that instance it turned out it needed a new radiator. when the turbo came in and put the engine under more strain rad couldnt cope and temperature went up. if your rads blocked or collapsed inside it dont matter how much air you push through it it cant cool the water. feel all over the core when the cars hot and see if the core is hot everywhere.
if everything youve said is correct and you got no pressure or oil and water mixture issues im fairly confident itl be your rad mate.
