Default Quick Question

I know i'm going to sound thick but am just re-building my 2wd cos engine after 6 months of not getting round to it, just coming to put the exhaust manifold on now but cant remember which way round the gaskets go - metal side against the engine or the gasket material side against the engine or does it even matter?

Cheers!!
