I've only skim-read, so at least some of these have probably been posted up before, but off the top of my head:
Only Fools & Horses- Del Boy's Capri Ghia (They used at least 2 different cars, one a mk2 and one a MK3), The Crayford MK2 Cortina he sells in "Go West Young Man", and in "Chain Gang" there was the 3dr Cossie you see a glimpse of in the car park, and Mike's XR3i
Minder- Various Capris, Escorts, Cortinas, Transits etc, loads
The Professionals- MK2 RS2000, Capri 3.0 S, MK2 Granada Ghia X 2.8 etc
Spender- 2WD Saff Cossie, and did he not have a 4x4 in later episodes?
Coronation Street- That Orange MK4 Escort XR3i with the flames and whaletail (it was just one graphic vinyl covering thing, it was white underneath, saw it for sale on eBay just after it was used for that couple of weeks), and loads of run-of-the-mill Fords over the years, Kevin Webster always used to have a Escort 1.6 LX MK5 Facelift, now has a Focus, Roger the plumber has a MK6 Escort Van, Audrey Roberts has a MK6 Fiesta etc Oh, and Brom's Cossie, in picture form only!
Eastenders- I never watch this myself, but did see a clip when Shane Ritchie (Alfie?) had a Capri 280
Brookside- Ron Dixon was it? Had a 2.8i Capri
Boon- In one of the early series when they had the hotel in Birmingham, an old mate of his turned up in a hired 3dr Cosworth
Life On Mars- MK3 Cortina
Shoestring- MK3 Cortina Estate
Dempsey & Makepeace- MK3 Escort 1.6i Convertible
The Living Daylights- Am sure I remember a MK5 Cortina in that?
Father Ted- MK4 Cortina
Keeping Up Apperances- MK4 Cortina
Lock, Stock- MK2 RS2000
Rise Of The Footsoldier- S2 RST (well, a 3i rep), MK3 XR3
errrrm, I'll think of more, lol

Anyone remember the white Saff in Casualty (i think) years ago?
Two lads nicked after blocking the owners driveway, then down the road realised there was a baby in the back... then crash... then ambulance... then hospital....
Also, a 'maxed up' Orion (citrine yellow i think) in Human Traffic, when they go to the house party.
Kip's Zephyr/Zodiac in Human Traffic
Bullitt Mustang...
I'm enjoying this post, i always notice fords on films/tele, bit annoracky tho!!!

Mercury Grey XR3i in Only Fools and Horses, belonged to Mike the landlord in the episode with the diamonds and ambulances
Not a Ford, but does anyone remember the Lotus Carlton in Spender? Has the piss taken by a 911 Turbo driver i think (long time ago, and i was only about 6 yrs old staying up late!!!)

There was a black or maybe mallard escort cosworth in one of the Prime suspect series with Helen Mirren, it came tearing down the street as she was crossing it.

Once Upon a Time in The Midlands,
has Rhys Ifans in it, his character has a white XR4i, gets smashed up then fixed, is in the film nearly all the way through...

Emmerdale had a Mondeo ST220 with red leather, also any one spot the retro Ford posters in Debbie Dingles garage.
Also in Corrie street Steve has a pictire of white 3 dr on wall in taxi office.

Same as, dont think there is a saff or any Cossie in it, the only car I can remember is that Lada Riva supplied by Tony Immaculate.
