I was going to suggest replacing the cap as it may not have been holding pressure and allowing the coolant to boil, but as you have replaced it then i its eliminated that.

What does you temp gauge read?

A sticking thermostat could cause this and also a failed headgasket

Sounds like it's running ok, and fan kicking in and out is a good sign. As above, change the stat anyway and check for air leaks, bleed the system and see how you get on.
