i have alot of parts kicking around the shed just wondered which ones to keep and which to get rid on a engine rebuild.
2wd and 4wd inlet manifold
2wd and 4 exhaust manifold
2wd and 4wd head
lots of sensors of both as well
which is best and why

If you mean plenum, keep the 4x4 one - slightly better design and flow distribution. Needs the 4x4 fuel rail and pressure regulator - does away with the poxy short bit of fuel line to the reg.
2wd exhaust manifold gives better torque.
I'd keep the 2wd head - gives slightly lower compression when compared to a similar thickness 4x4 head - unless it's an early 2-bolt thermostat housing head/small head bolt washer head, in which case, I'd keep the 4x4 head.
