Use a proper rolling road and you will have no problems!

the rollers are a bit odd reads about 280 bhp at wheels and when hit main boost at 4500 rpm just spins.

If the roller diameter is too small then you will end up with problems due to a small contact patch between tyre and rollers for instance.

bummer
putting more weight on the back end of a sierra does not help traction on a rolling road. all that you do is increase the negative camber and toe-in, and reduce the tyre's contact patch on the roller.
and a cool room does not necessarily make a good dyno room - one with sufficient airflow does.

Neil, your powers of observation leave a lot to be desired
.
I'd say 300bhp @ wheels before turbo lunched itself.

The settings of the RR should be able to be altered to decrease the amount of Wheelspin.
The Acceleration rate of the Rollers is set to load the car up, this can be increased so that the rollers have a better chance to keep up with higher powered cars. Well, on most RR's anyway. The consequence of this might be that there won't be enough resistance/load to allow the car to build full boost.
