Default seems strange.. any ideas

bought a new set of roose hoses the other day,
(to replace original ford boost hoses)

put them on, and now the car seems to 'chatter' a lot louder

only a silly thing i know, but just wondering why this might be. lol

any ideas why?

you were probably leaking a bit of boost thru the old hoses, and now the only place for the extra to go is out the wastegate

Did any small voles with false teeth get trapped in the new hoses when you put them on?

Here's an idea - the roose hoses are stiffer, and are not absorbing the chattering sound as much as the ford ones used to

PMSL @ Chattering coming from the wastegate
