For a road car, such intrusive and labour intensive work would be totally pointless.

Every weld, is another opportunity for rust.

The car is completely bare metal and the joints are clear. It would only take time to do the welds.
It indeed could be a point to start rust. But the car will be thermal zinc sprayed. So it would need to go through that sacrificial layer first. The car will be overloaded with anti rust/preventive stuff when it's hanged in a hoop, so that stuff will get everywhere.

Just want to know if it is worth to do it. and if you can feel the diffrence. I know the chassis of these things are very weak.

You have said it will be a road car so you won't be driving it like a track car so I doubt if it will be something that would make any difference.Sounds like you will end up with a very good road car once it is all finished.

If it's already completely bare metal, and you've the time etc....then I see little reason not to do it ? I'm sure it can only be a benefit if done well.

It'd be a different story if you were doing it to an already painted/sealed shell.
