My Escort came with little history too. Best I could do was to search the MOT history online which I think can go back to 2006. Not the most informative way to get details but better than nothing I guess.

Seems to have lost 5000 miles at MOT time in 2008

Definitely not a good way to start ownership. I wonder if that is why it has no history.

If you look this happened on the same day it failed and then passed mot later that day. Dvla are supposed to be amending this in the next few weeks as it looks to be a tester fault not entering correctly

what's the current mileage? While a reduction of 5000 doesn't sound good there might be reason for it. 5000 miles on a 30 yr old car isn't much (depending on total mileage). Similar thing with me, although mot history is consistant. 46k on the clock when I bought it but nothing to say whether it's 146 or just 46. But given the lack or rust and general condition I like to think it was 46k. It is in much better condition than the mk4 I owned in 2000 which was 89k when I bought it. That was in a shit state for a 11 year old car at the time.
