The extra volume is next to nothing.
I'm running a sandwich plate with 90oC stat.

in theory you can calculate it. The cooler manufacturer should be able to tell you oil volume of the cooler, and you can calculate the volume of your pipework dead easy.

however in practice its not much and probably no more than half a litre even with a bigish cooler and pipe run.

If its a road car then you MUST have a stat in the take off plate otherwise on road driving you will very rarely warm the oil up sufficiently.

Less then half a litre, maybe 200ml.
The volume in cooler is pretty small.
