got 300mm discs to go on my s1 and i was intending to use s2 calipers (HI SPEC Conversion),i have been given some escort cos calipers so thought i would try them,
they fit but only have 1mm between insie of rim and caliper,
is this sufficient or am i best of grinding some of the caliper,

As long as it doesn't hit the wheel I guess its ok, how about using a 1-3mm spacer if your worried?

I run Cossie disc's and calipers on the front of my S1 and there's very little clearance.As the pads have worn the clearance has increased.
Haven't had an problems.
