The whole top end wear from the minute the engine is first started, so mix and match may work for a few miles until the worn cam lobes grind them down again.

True I have seen this done. the second hand engine I bought for its block (as mine had large hole) was bad two of the lifters were in fact so bad I had to fource them out with grips. the cam mushrooms the bottom out....nice.
You may find its damaged the bores they sit in then. when they are that bad the best way is to slide the cam and drop them in and out through the cam hole to avoid damaging anything
