You need to decide whether you actually like and want the car. If you do, then identify the problems and list them in the order in which they must be addressed. Start at the top and and work to the bottom. Don't set unrealistic timelines and make sure that you get good advice and and help to finally resolve each of the issues. Its just planning; nothing more, nothing less. The process can be a burden or a joy; its what you make it.
Restoring a car is has incredible ups and downs, especially if you do it properly. There will be times when you cannot even look at the car, and other times where you cannot wait to get on. But when it all starts to come together you won't regret it.
Here is a picture of my MKII RS2000 coming out of the paint shop. The restoration has to this point taken nearly 3 years and at times I have felt like quitting and dumping the thing. But now its going back together and the light is visible at the end of the tunnel. This is the really fun part.
So ask yourself; do you really like and want the Cossie or not?

There is no point dwelling on what has happened; you cannot change it, and it certainly won't make you feel better. Learn from the past and don't make the same mistakes again.
You should regularly visit the guys who are now working on the car; ask them about what they are doing and get them to show you and explain. That way you will understand what is happening, what is going right and what is not. Get involved and keep an eye on it.
If you are unsure about an issue there is mountains of experience and advice available here. Just ask.
