My bike is currently 8 speed, wheels on it are a bit rough, seen some wheels I like on ebay but they have 7 speed cassette fitted, just wondered if I could remove cassette and fit an 8

might have a shorter freehub for 7. if so, just replace the freehub with an 8 spd one

As long as its a cassette and not a 7spd freewheel that youre taking off, but as said, the freehub body will need swapping too, a 7 speed one will be too short. 8 and 9 are usually the same length however

Remember you may have issues if the cassettes aren't worm to the same degree with gears jumping..
Hence, when you fit a new cassette, you should always fit a new chain too...

and chainrings and derallieur pulleys........

To be honest going from 7 to eight speed 'may' require

Chain
Cassette
Freehub body
Chainset ( possibly )
Front Mech ( possibly )
Bottom Bracket ( possibly )
Shifters

Might as well go the whole hog and get a new groupset
