all you need to do mate is undo the clamps that hold the axel to the leaf springs and put the axle on top of the springs and redo the clamps

thats basically it i beleive but it isnt too hard, take the chance to give it a good clean while its off though

the front is the same as any mk6 escort, so look for some lowering springs for sale...here or ebay etc

yes 17's will fit on fine

Putting the axel on top of the springs is a very crude way to do it. There is a lug that sits in a hole iirc and when the beam is on top it obviously doesnt locate, so you need to weld the clamps to the beam or it will slide from side to side when you go round corners! When i did my mk4 van 10 yrs ago i sent the leaf springs off to LEDA and they decambered them to whatever height i wanted. You also need to adjust the handbrake mechanism as it thinks the van is full of weight and keeps locking up the rear wheels.

I think the wheels will be fine, might sit in the arches a little at the rear. In regards to lowering i also dont think flipping the spring is a good way about it. Its a quick way but the rear will sit on the bump stops.
As above i took mine to a lorry place in wembley and they presses(De-cambered) my leaf springs the equivalent of 40mm.
Dont know if you would be able to use rear suspension from a capri on a mk6 this might me worth looking into.

The offset will be fine but you wont get wider tyres in there than 195
