ive got a three door cossie which was taken apart a while back, ive not gone to re fit the thermostat housing and new thermostat, it had a new seal but should there be a bloody great circlip or similar holding the thermostat in??

 

There's a sort of triangular clip that holds the stat in.

It sits in a groove around the inside of the housing.

The Pinto part of the Sierra Haynes comic has a good picture - I couldn't find tge clip in mine because of the crap in the housing. Took me a while to get it out too because it was gummed up.
