plastic laminate sheets with timber vaneered face.sticks on with evo stick and about >1mm thick or the rolls of paper thin self adhesive sticky back plastic . the first option will be a time consuming job to get looking right and the second option will just look shite, best painted and/or grained effect.
if the mdf has a stained timber vaneer face already its unlikely to strip the dark colour for a light colour without wearing through the thin vaneer.

I've seen the stuff they have for kitchen units, so you can change the colour of the units just sticks on, that stuff is good enough, dont have to be perfect, not sure what they call it though
This is what it's for:

you buy it in 3m x 1.2 m sheets from trade suppliers with all sorts of finishes/vaneers from all timbers, metals like aluminium or stainless or in solid colours.

..and thats how those professional joiners you buy from vaneer them in the first place.we used all sorts a lot when making bars and counters for pubs and shops. its probably not for home diy anyway as the cost per sheet would be dearer than buying a new unit in the first place.
same as fuzzy said really we use the mdf vaneer in are joinery shop and it does look the business very posh price wise the sky is the limit really u can get laminate cover panels but they are very brital and can snap and trying to finish the ends are all so hard best thing would be to sand it down and paint
