need a new really good battery.
needs it to be over 560A
and idealey it needs to be square terminal.

Varta make Halfords batteries, so I brought a Calcium battery from Halfords for £65 (With trade card, retailed at £100 otherwise). I searched everywhere for the best battery I could buy and only ones better than this was a Varta battery (£96 and ONLY 2 Amp difference) and the Gel batteries (£150+)
Phone Halfords up and ask what they have in stock and the Amps that they supply. Escorts can take bigger batteries than standard
I had a Varta battery and 90amp alternator on my old S2 and never had a battery problem with a loud sound system. I need to uprate the Skoda alternator at some point to be safe

There are many ways these are rated, so not a direct comparison.
There is LEAD CALCIUM, CALCIUM CALCIUM, CALCIUM SILVER, VRLA, or AGM, absorbent glass matt, same as gel.
The agm is by far the better battery if you want mega amperage, the odyssey ones use a spiral cell design, so getting even better recovery time, expect to pay around £130 for these, optima are also very good, the best conventional lead acid one is VARTA with it's calcium silver.

My 13 ton jcb battery is huge but is only 120 amp a 560 amp car battery won't even turn it over

The 640 is a SAE rating, the better rating is EN as it is much more realistic as in the test criteria is cold performance cranking etc, and a 640 SAE would be roughly 225A on EN rating.
Even if the 640 started the jcb I bet it would bend the plates!!
On my 2.1 pinto sierra, I cut the battery tray end off and had a 120AH, 950A mercedes G wagon heavy duty in there, it nearly spun the car when starting!!
