They are famous for burning out the wiring to the fans, at the fusebox as it is a crap design by ford, it can't handle the power drawn by the fans.
The best thing to do is make yourself a new bit of wiring/relay(bypass fusebox) for them, dead easy to do, couple of hours work at most, for total reliability.

duno if you got an escos, of saff.
but i had the same problem on my escos last week.
the wires to the fan we completly knackered, as was the switch (looks like a small water leak had slowly corroded them. the fans worked with air con but not on cooling circuit.
simply replaced the wires, work fine now. Duno if saffs the same but on escos there a green relay behind the battery which controls the fans, may be worth checking that?

I'd use an after market fan controller to control the fan. firstly you can adjust the kick in temp of the fan and over ride it to turn the fan on constantly ideal for track days and traffic jams. only cheap check out this e bay item number 280196372826
Hope this helps

If you are not up to doing a(simple) loom, then best let someone else do it, as important.
If I were doing any track work I wouldn't be using a shonky old weber marelli ecu anyway, many aftermarket ecu's have fan control, and after run.

they mean like this mate keeping it away from the fuse box. even though im using fans that are going to draw alot lesss current than standard stil using 2x relays and 2x fuses and an override switch inside.
Like that but DON'T put them there, as it is a stupid place subject to water ingress.
I mounted my SINGLE relay by the battery, I suppose if you want double redundancy then two relays with one controlling each fan is a good idea, as you will still have one fan should the relay/other fan pack up.
