Default Oil and water temp query...

Hi all, since fitting the Pace full size intercooler on my car the water temps have been sitting very low, only in traffic or slow moving does it start to rise (good or bad?)

Oil temps on full chat am seeing 100 degree maximum and this is on a 4 mile bit of road (wasn't being silly with traffic - was clear), water temps remained low
Now normal driving it sits about 70-80 degree (oil)

What is the kind of temps that I would want in an ideal world when on boost driving?

Mine also has a calilery sensor in the top hose just after the thermostat.

The temp stays between 70-80 when just driving and even giving it death don't go over 90.
