what is your oil pressure??
I don't know why mine is so low on Hot driven ?
It has lost a few pound of pressure over 3 years but has never been high.
I think your Hot idle is a bit low, but not sure.

The original oil pressure sender is set to show the oil light on when you hit 15psi.
If you showing 20psi at idle...not really a worry maybe your tick over is a bit low?
The main part is 2000rpm as Mike points out MUST be min 35psi.
My 2 Cossies have newish engines in the Escos has a high pressure pump and the Saff a std one.
Escos @ idle at 1000rpm tickover is 35 (will drop to 25 after a really hard thrash but its only running semi synthetic oil at the mo)...at cold its 70psi ish warm at 3000rpm 55psi
Saff @ idle at 700rpm on crap running in oil is 30psi ish on cold about 55psi and at 3000rpm around 50psi

My pump doesn´t make any higher pressure than the normal high pressure pump. It just makes more pressure at low rpm.
The high pressure at low rpm means my pistons loves me for getting nice cooling oilspray even at tickover.

Don't forget that oil plays a big part .i find that castrol 10/60 gives a higher all round pressure,mobile 1 motorsport is a little lower .
My mate put comma oil in his and hot pressure was the worst (driving) at 35 psi
@ 4000 rpm
The oil did not stay in there long !!!!!
oil coolers can drop pressure as the pump needs to flow more .

im using 10-40 mineral oil to run it in,
is this gonna give me any probelms when i change to proper oil later on?
blowing seals out all over the show ?

Just finished my bottom end rebuild as well last night
Got a standard pump in mine, hot idle is now 39-40 lbs

Probably no, if it´s a high pressure pump. I think it´s the pressurerelief that opens to keep it at that pressure.
If it is a std. pump you might have a problem running thicker oil. Because 80psi on a std. pump means that the pressurerelief valve can´t get rid of enough excess oil to keep the pressure down. And this would get worse with thicker oil.
If everything is rebuilt with new stuff with the right clearences, you won´t get much more pressure with better/thicker oil.
If there is a huge difference, something is wrong. Only if the clearance in pump and/or bearings is too big you will get benefit of a thicker oil.
If it is a std. pump you might have a problem running thicker oil. Because 80psi on a std. pump means that the pressurerelief valve can´t get rid of enough excess oil to keep the pressure down. And this would get worse with thicker oil.

and yet the oil pump is the only thing thats been altered... they still reckon it wasnt fooked
just wanna drive it now!
