dont take the thermastat out it helps to slow the flow of water down to the rad to give the water time to cool down before it enters the engine again.
check the stat is in good working order and make sure the rad is good try back flushing it ect. also another thing to bear in mind is the cam timing if this is out then your car could cook. or even go for a charge cooler to give more air flow over the rad.
