same reason you want boost or cams or anything else that gives you power.
if setup properly nitrous is silky smooth and safter to use coming out of a bend than boost is on most cars.
Not the power, as i know you'd need it for that

depends on:
bottle size
jet size
controller settings
how much you are at WOT
its great on tracks as antilag on a turbo car for example
