I got my first RST (S1) when I was 20, and it was £1450 TPF&T to insure it with 1yrs NCB in my own name. My next one a couple of years later cost £650 TPF&T (3yrs NCB, in own name)
Inuring a car in your dads name with you as name driver does work, sometimes, but insurers are not stupid and if daddy has been driving 1.8 litre Rovers for the past 10yrs and suddenly decides to buy an Escrot RS Turbo and add his 18 yr old son on the policy, they smell a rat

Also you won't earn any NCB so in 5yrs down the line you will still be having the same problem
And the "insure a shitter fully comp then you can drive any other car" doesn't work, as the car you will be driving needs to be insured by someone else. Ie : you insure a 1litre Fez fully comp (in your situation thats proabbaly gonna still be £600+) and then youhave to get someone else to insure the RST. Probelem with that is if someone else is insuring the RST then it will need to be their name on the logbook, and not yours. So technically you won't even own the car
