Get yourself a set of det cans and a wideband and get stuck in mate.

If you can manage to map a few cars on the road like that, then running a set of rollers should be easy, the rollers themselves are just a tool at the end of the day, its knowing how to get the best from an engine that matters.

Sadly though, it really does take experience to be any good at, some things you cant really teach very well.
