I'd say their biggest asset would hopefully be a good database of known problems and fixes. Of course any ability to fix very much depends on the problem. Most genuine actual faults would be impossible to fix roadside without parts.
Most of their callouts they refer to are probably just idiots running out of fuel, flat tyres etc

But really...either your work needs to buy better vans, or less abusive drivers lol
