Don't know if it would be any use to you but on
http://www.bigturbo.co.uk/ there is a table on the sensors tab of temp vs resistance of the sensor. This is used in a voltage divider network to provide a voltage to the ECU. If you know the value of the other resistance used in the divider network, you could use ohms law to come up with a voltage vs temp table.
