So, im soon to pick up on Friday an imported pretty standard running Cossie from the UK. It came to New Zealand in 2006.

There certainly wont be many Sapphire Cosworths in NZ so sounds like you have been lucky to find one. What is the NZ equivalent of our DVLA like when it comes to modifying cars there? Are they relaxed about it or strict?
Is it a 2wd or 4x4 Sapphire Cosworth?
The YB engine can be as wild or tame as you want to make it. There has already been a useful post suggesting up to a stage 3 conversion which is a good all round route for extra punch without loss of reliability.
I have sourced parts from Gary at RS breakers and had no problems but if you need new engine parts etc you will have to buy them from somewhere else like Graham Goodie, Harvey Gibbs or Motorsports Developments.
Before you start upgrading the engine make sure it is in good condition as you will be putting extra BHP and torque through it which will very quickly find any weakness in it if there is any.
