Personally I would just rig up a simple temp read out and see what it is doing before going to the expense of a cooler as it may not need it at all. There may be enough airflow under the car to keep it cool anyway and the cover in ally is a massive heat sink.
On the Nissan S13/S14 coole, it was a 2 stage switch.
You had to be going over about 6mph in the S13 to trigger the first stage .....plus the diff oil temp had to be over 130 deg C to operate the pump through the cooler.
The S14 was the same but the speed switch had to recognize 75mph to trigger....and then the thermo switch at 130 deg C as before.
They were the factory ones just to give you an idea of what the Nissan engineers thought were the operating criteria
I think a light used to come on in the S14 to tell you the pump was active. The light used to fail fairly quickly so many people weren't ever aware of it coupled to the fact that few people ever achieved the conditions to operate the pump.
