Default Ownership and registered keeper.

I understand the difference between the two terms but how can you ensure legally that the owner is definitely the owner should they not be the actual keeper of the vehicle? The way I see it and also here, http://m.askthe.police.uk/content/Q743.htm , the person who essentially uses it and is therefore responsible for it should be noted as the keeper and have the v5 in their name. But how do you go about proving someone else owns it. The background behind this is I don't want to own my car just simply use it. Ownership will be passed on to a relative. Do I just make up an invoice and we both sign and date it?
