The temp senders are not all calibrated the same, a friend of mine had this problem a while ago, new sensor meant his car was running hot all the time, changed it for another new one and it went back to normal again. I suspect in your case it's probably just the fact you have a new loom and an old sensor, if it's not overheating then nothing to worry about!
