I've always hand written mine (unless its sent by email) and just put the basics like:

Dear Who Ever,

Please find enclosed a copy of my C.V. for your perusal in response to the above vacancy advertised wherever. I look forward to hearing from you.

The CV is the main thing so dont go into your lifes details with the covering letter as you'll bore the hell out of them ...
