I doubt the pedal assy is causing it to rev up on it's own (I have never seen one do it,anyway), these pedals have 2 resistors in them which work in opposite 'directions' so we call them APP1 & APP2 (APP - accelerator pedal position, or 'another piece of plastic' as I call it!) APP1 for arguments sake goes from 0-5v and APP2 goes from 5-0v to stop a 'runaway' situation. Generally if the pedal fails on Fords it will start and idle but not accelerate. Just a case of unbolting it, disconnecting the wiring and bolting a new one on. I would advise getting a diagnostic check done on it to see if any pedal relevant codes.

As far as I know there's only the coolant sensor in the thermostat housing. I had a look at one today whilst servicing it and the sensor can be removed with a circlip so guess it's available seperately.
