Mk4 1.25 fiesta is looking a good challenger, just for how many parts fit them, something like -
Puma springs and dampers, cosworth brakes, mondeo 15" steels, possibly port and polish the inlet/head (dad and my boss have both done this so I'm not just going in blind) then it's a case of seat time/looking for events to enjoy the car on - that should be do able for 1k and insurance for about 1.5k

For a £1,000 you can fully replace the suspension with new fixed uprated items (i went for spax) and polybush setup and sturt braces, 300mm front brakes, full 1.7 puma engine conversion. Also i wouldnt waste your time or money with a port and polish as all it will do is add 0bhp and leave your wallet emput, 9x out of 10 all thay do is quickly open the ports out little bit and clean them so thay look good, Get the head ported a 3 way valve angle and skimmed and it will cost less than a port and polish and give the best gains you can get without changing the valves.
