The sound that you hear when you crack your knuckles is the sound of gas bubbles bursting between the joint of your bones. The popping or cracking sound is caused when these gases are quickly released from your knuckle capsule thus your joint is able to stretch as much as the space previously occupied by these gases and this usually gives you a stretched feeling.
