This in most cases (Usually the trip reset button is used), although it can also be done via OBD (i.e. computer) which is most likely what the dealer would do but everyone else would just use this combo.

I would have thought it would mean 500 miles until the service is due, then a minus figure thereafter, not owning a modern car it's just a guess?
