AP Racing CP2000-35, good for 300ftlb and is not a paddle so drives much nicer in town etc. £400.
Pedal conversion is literally just a mk5/6 pedal and quadrant, gives more travel on the cable as the high pressure covers require it to fully disengage the clutch.
If your ZVH then I also recommend fitting an IB5 gearbox as the fiesta BC box will last about 10mins with any sort of decent power/torque, IB5's are not much better but they are at least better! lol
