Thermostat is easy enough to do, but then if that were faulty you would normally notice it in that it will either overheat or not get to running temperature.

VSS will cause the speedo problem you have and it can also effect the driveability of the car, it may also be causing the idle issue as well so my advise would be to fit the VSS first and then go from there.
