Stock crowns are flat with a cut out for the inlet and exhaust valves. When they are skimmed the exhaust cut out is very small/not there.

Forged piston crowns are machined so will have crisp/sharp edges around the cutouts, im not sure but they may also have a slight dish machined into them also.
