If the oil is heatsoaked then that is the temperature it actually is... Which is what you need to know! lol
Oil sitting in the sump will be cooler and not a true reading of how hot/cold it is going round the engine.
Sandwich plate between oil cooler and filter is best IMO.
Temperature wise I've never seen mine go over 98 degree's even when driven really hard, normally sits around 80 degree's with ambient temps of around 20 degree's, in the winter it stays quite a bit cooler.
