fittted to the sump will be more accurate and won't be carrying heat soak from the block.
ideally oil needs to be around 85 degrees, but can be fine over 100degrees, some oils vary in stability when they get hotter.
50-120 degree scale is fine for what you'll need.
try fitting an oil cooler with a thermostatic sandwich plate if it gets too hot.
