Well if you look at the first curve, its a lot smoother and it has 90% of peak torque (300lbft) for pretty much the whole section of the rev range that people normally drive a diesel car in, ie from just under 2K to just over 3K.
So if you change gear at just over 3K, you will be permenantly in that rev range.

If you want it at 5Krpm though, like Nick says you are going to need a bigger turbo, and then you'll lose it down the bottom of the rev range of course.
