MAF (Mass Airflow Sensor) is a wire gauze that works on a hot wire principle, it has the ability to measure air flow as well as temperature, usually I think the general consensus is that if the car struggles above 4K the MAF could be faulty (Usually it just requires cleaning) I think when there unplugged if the car performs better then it confirms this.

I don't think it is in your case however, the fact it only happens at high RPM would suggest ignition or fuel to me.
