The height of the car will not make any difference to the effort needed on the wheel by the driver, well not enough to notice anyway.
The pumps can become sticky, just put in some WYNNS power steering system conditioner, I use it myself, as it's ace.
The steering should be as light as any other pas car, ie not heavy by any means, you should just about be able to turn the wheel with 1 finger against the spoke, here again the wynns stuff works wonders freeing up the pump, esp after/if laid up for periods.
