Right 3 questions in 1 so here goes

Just picked up a refurbished weber DFT which has been converted to run on water choke..question is how do i convert it or is it nessacery to convert it to run on manual choke or is it true that i can be run without?.. Its repalcing the VW carb on a 1400cvh
